It takes 3 days to prepare and roast the duck, then we break down all the delicious cracklings and meat along with the rendered duck fat to make the popcorn. All of this is then incorporated into our small batch caramel popcorn technique we do in-house in SF. We only use the best ingredients, using the most special mushroom shaped kernels instead of the conventional butterfly shaped kernels.
